New Professional Cooks Qualification Launched

Further a career as a cook, commis chef, or those working in other professional catering roles that want to expand on their skills with our brand-new qualification: Highfield Level 2 Diploma for Professional Cooks (RQF).

What topics are covered?
The Level 2 Diploma for Professional Cooks covers a variety of topics:

  • the principles of food safety and health and safety
  • kitchen equipment and knife skills
  • workplace standards and professional development
  • environmental awareness
  • nutrition, special diets and allergen awareness
  • cold food preparation and presentation
  • cooking methods

How long is the course?
The total qualification time for this qualification is 670 hours, of which 365 are recommended as guided learning hours.

How is the qualification assessed?
Units 1 (Principles of Food Safety for Catering) and units 2 (Health and Safety within the workplace) are assessed through multiple-choice examination, externally set and marked by Highfield Qualifications.

Units 3-13 are assessed by an internally set and assessed portfolio of evidence. Highfield has provided assessment documentation that centres can use, which is available to download from our Members’ Area. Centres will need to have IQA processes in place and will be supported by our EQS team through engagements.

Highfield launches two new catering qualifications

Spice up your offering to learners with two brand-new catering qualifications; the Highfield Level 3 Diploma for Professional Chefs (RQF) and Highfield Level 3 Diploma in Patisserie, Confectionary and Bakery (RQF).

These qualifications are designed to support learners employed in professional catering roles or for those wishing to develop their skills in the industry.

Highfield Level 3 Diploma for Professional Chefs (RQF)

What does it cover?
This qualification covers a variety of topics including:
• the principles of food safety
• kitchen etiquette
• workplace standards and professional development
• allergen awareness
• kitchen operations
• menu planning and recipe costing
• preparing, cooking and finishing food groups

How long is the course?
The total qualification time for this qualification is 712 hours, of which 454 are recommended as guided learning hours.

How is it assessed?

Highfield Level 3 Diploma in Patisserie, Confectionary and Bakery (RQF)

What does it cover?
This qualification is aimed specifically at those specialising in patisserie, confectionary or bakery in their workplace.
It covers a variety of topics including:
• the principles of food safety
• kitchen etiquette
• workplace standards and professional development
• preparing, cooking and finishing food groups related to patisserie, confectionary and bakery

How long is the course?
The total qualification time for this qualification is 637 and of this 393 are recommended as guided
learning hours.

How is it assessed?
Unit 1 – Principles of Food Safety for Catering and Unit 2 – Health and safety within the workplace: these units are assessed through multiple-choice examination, externally set and marked by Highfield Qualifications.

Launch of the new Highfield Level 3 Award in HACCP for Caterers (RQF)

Highfield has launched a new level 3 award in HACCP for businesses working in the food service and catering sectors.

The Highfield Level 3 Award in HACCP for Caterers (RQF) is a one-day qualification designed to help food service and catering employees gain a better understanding of how HACCP can be applied simply to a catering environment.

It will also be useful to those learners who already hold a level 3 or level 4 food safety qualification as a means of demonstrating CPD, as well as enforcement officers who mainly inspect catering premises.

The total qualification time (TQT) for this qualification is 7 hours, of which all are recommended as guided learning hours (GLH). 

The Highfield Level 3 Award in HACCP for Caterers (RQF) will eventually replace the current two-day Highfield Level 3 Award in HACCP for Catering (RQF) qualification, which will be withdrawn on 31 October 2020.

Meanwhile, the Highfield Level 4 Award in HACCP Management for Food Manufacturing (RQF) expired on 19 April 2019, and has been replaced by the Highfield Level 4 Award in HACCP for Management (CODEX Principles) (RQF), which has been available since April 2018.

Any learners registered before 19 April 2019 will have until 19 April 2020 to be certificated.
